VeggieWorld

Today was VeggieWorld in Utrecht Jaarbeurs. Super interesting. As a child in elementary school, I choose to be vegetarian. I really love animals. And I grew up on a hobby farm. So I really didn’t want my chickens, sheep or rabbit on my plate. Of course I didn’t see any harm in eating dairy. I thought it was part of taking care for your animals. The same as me brush my hair or teeth. Part of the daily routine. I actually thought I showed my love by doing this to them. (I left my guinea pigs free, and thought I made the whole world a bit better. But in my Disney world were no hunting dogs from the neighbours. Of course I was 3 years or something.) Still I didn’t want to eat animals, because they are so cute. This home with all the animals was my little heaven.


Later on, we moved. No more farm. Still guinea pigs. I was a bit older and started sporting a lot. I was the only vegetarian in my family. So I switched to flexy vegetarian. I didn’t want my mom to cook an extra meal for me. Mostly because I didn’t eat with them. I came home later because of my sports. I thought it was unsocial to ask this of her. And again, a bit older, my opinion changed. (ow I’m getting old.) Keeping livestock is very inefficient. There is a lot of energy, water and grain consumed by keeping livestock. While there are so many places in the world where is shortage. Besides, we don’t necessarily need meat, fish or dairy products. I didn’t think I could live as a vegan. Because as a real Dutch person I love milk and yoghurt.


But VeggieWorld was my aha moment! They had all the answers to my questions. Fish? No, seaweed! Where do I get my proteins? Beans, nuts, and avocado. Cheese? Yes we have cheese, vegan cheese. Really? Yes, really! And super delicious. So not yet…. But in a few weeks I want to start the vegan challenge. Then I can see how easy it actually is to eat plants. Only plants. So I don’t eat animals, I eat animal food. Rabbit food! I say yes to plant power. I already bought my seaweed. I love seaweed.

At the end of the day De hippe vegetarier had a presentation. She showed all the new food trends for vegetarians. She gave me a lot of inspiration, and I really enjoy her blog.

Pizza with cauliflower bottom!!!

I love pizza. But because of my diet I can’t eat pizza. White flower is not good for your body. So it’s good to find other ingredients. Besides this cauliflower button is super yummy.

What you need for the bottom:
  •           1 Big cauliflower
  •           1 egg
  •          A little garlic
  •           Optional some chees (Pecorino cheese)
  •           Thyme
  •           Salt and pepper
  •           Tea towel
  •           Blender

Topping:
Well this is the thing with pizza. It’s like you can add all your trash on it. Do you have leftover veggie’s, and you don’t know what to do with them. Well pizza is the answer. Use it. Be creative! This is what I used:
  •           Leek,
  •           Sun-dried tomatoes,
  •          Tomato sauce,
  •           Zucchini,
  •           Smoked fish,
  •           Fresh basil.
  •      Mozerella

How you make it:
  •           Preheat the oven on 180 degrees.
  •           Cut and was the cauliflower.
  •           Add the cauliflower in the blender, make it very small.
  •           Cook the cauliflower for 5 minutes in the microwave.
  •           Let the cauliflower for example, drain well in a colander. In this time it can cool off a little.
  •           Then you can squeeze the cauliflower in a tea towel. It will leek a lot of moister.
  •           Put the cauliflower in a large bowl. Add the egg, garlic, thyme, cheese, salt and pepper. Stir it all together.
  •           Line a baking sheet with parchment paper. Spread the mixture over the parchment paper.
  •           Bake the bottom in about 20 to 25 minutes. It should be crispy. Mine was not crispy enough. I add the topping et this time, what made that the bottom wasn’t firm.

No butter, no flour, no eggs Delicious Brownies

As I’ve said before; I love cocoa! I’m a chocolate addict. The real chocolate. 85% pure chocolate. Only there is one problem. Mostly thy add a lot of unnecessary sugar to cholate, and mostly thy contain the NOT GOOD fats.
So how do I get my cocoa chocolate feeling in a healthy way ?
Well with this avocado brownie receipt ! Soooo delicious.

What you need:
  •          2 avocado’s
  •           1 tsp of honey
  •           50 gram of RAW cocoa powder
  •          1 tsp vanilla extract
  •           2 tsp of coconut oil
  •           50 gram oats
You can add some cocos chips, linseed, and lemon juice if you want. Be creative with this! Maybe you have some better ideas?



What you do:

You meld the coconut oil. You add everything together in a large bowl. In this bowl you mix everything with a hand blender or you do it directly in a blender. Line a cake thin with parchment paper. Provide the parchment paper with coconut oil. Before you do all of this you can preheat the oven to 180 degree.  Bake for 20 min. It has my preference to eat the brownies cold. To let them cool of …don’t place them in the refrigerator.

Rawsome is awesome!!

Today my friend took me to Rawsome in Arnhem for a brunch. Her friend has just become vegan.
Everything at Rawsome is vegan, gluten-free, and raw. So everything is perfect for my diet!!!
I love this place. Every bite I took gave me a mouthgasm. And for all the chocolate gravers. Here I learned how you can eat something that tastes like chocolate, bud is more healthy.
I’m one of you, I’m totally devoted to chocolate.


 Next to that you can by raw chocolate. Which are still fat bud it are the good fats. We like those!
For all the people who don’t have Rawsome close to them. In Jumbo and other local supermarkets you can buy them now.


I’m not a vegan. I don’t eat meat. I do eat fish and cheese. Bud because of Neeltje’s friend we both something that tastes like cheese bud isn’t cheese. It’s not from an animal. I’m going to try this. Lather on you can read what my thoughts are about it.

Easy dinner !!!

I’ve been extremely busy.
From zero work I was a 100% busy. I didn’t know what to do when.
So making new receipts for healthy dinners was not going to happen.
Besides I was having a snack attack!

So I made this easy dinner !!!
Steamed broccoli ( If you steam you keep more vitamins compared to cooking.)
With a sauce of: Greek yogurt, mustard, teaspoon of fresh lemon juice, fresh dill.
Vegetable chips from: beetroot, carrots, garlic, olive oil, balsamic vinegar, salt and pepper.
Preheat the oven to 220 degrees. Place the baking dish in the oven for 20 min. Turn the chips and put it in one more time for 20 min.


And you can eat !!!!!!!!!!

Veggie toss

Super easy Veggie toss!
I love vegetables. And with my new diet I need to eat a lot of them. The best is to eat them fresh.
But of course we don’t want to spend a lot of time making all of this. Work, children & sports can take a lot of time!

Here a list of the vegetables and herbs I used. Of course the easy thing about this is you can use all vegetables. You can use a huge variety of vegetables in an oven dish. So be creative and tell me about your dish in a reaction bellow.
-          Onion
-          Sweet pointed peppers,
-          Mushrooms,
-          Green Asparagus,
-          Salt,
-          Pepper,
-          Turmeric (Kurkuma),
-          Garlic.
-          Optional: Pine nuts,
-          Optional: Real feta cheese from a goat not from a cow.

Preheat the oven to 200 degrees. Provide the baking dish with olive or coconut oil. Place all the vegetables and herbs in the baking dish. Put everything in the oven for about 15 min. Turn the vegetables and place the baking dish in the oven again. The whole kitchen will have a delicious scent! On your plate you can add some pine nuts and goat cheese.

Delicious cinnamon Smoothie!!!

What you need:
  1. -          Mango
  2. -          Pear
  3. -          Summer fruit  (Zomer fruit uit de friezer van de AH)
  4. -          Carrot
  5. -          Cocao
  6. -          Cinnamon


Then you pould everything in the slowjuicer or blender. My preference is for the blender so you preserve the flesh. This is super high fiber and good for your intestines. It’s a weird smoothie! It’s full of summer fruits but tastes like winter. It tastes like stewed pears.


A while ago I went to a casting! I was super exited. Because I’m a bid old for modeling work. For a little while now I try to get in to the modeling world. For some reason photogravures really like working with me, but agency’s were not interested. So I started to focus on something else. I thought there was no market for me as a model. Because I love sporting and follow a class to become a weight consultant, I figured I should enter a Miss Sport’s composition.

But during the casting thy told me I had a lot of potential! On the condition that I was going to lose 8 centimeters on my hips and waist. 8 is a lot! So I started detoxing. Next to that I found a personal trainer. He gave me a diet. This smoothie helps me a lot. I need to eat a lot of cinnamon. This smoothie is like candy to me!

Ow my god I've made the best pancakes in the world!!!

After my run today I was so hungry. And bananas are so nice after a workout.
So I made oatmeal banana pancakes.
Many girls are addicted to chocolate.  I’m not a exception.
Well I thought. Turns out I’m not addicted to chocolate. I’m addicted to cacao.
So the new best recipe for pancakes ever you will find here!

For 6 pancakes you take:
-          1 ripe banana
-          2 egg’s
-          35 gram oatmeal
-          A small amount of vegetable milk like: soy  or almond milk
-          If you like sweet’s you can add some honey. Bud the banana already makes it sweet.
-          1 thee spoon of cinnamon
-          1 table spoon of cacao

Grind all the ingredients in the blending machine. Heat the coconut oil in the frying pan. Use a ladle to measure how much batter you need to get the desired thickness of the pancake . Bake them on both sites gold brown. Then yah !!!! you can eat.

Because of the cacao and banana you can eat them right away. You don’t need to use jelly or anything.
It's already taste-full and healthy.

Mushroom oven dish


Main course. 4 persons. 30 min.




250 g mushrooms + 250 g chestnut mushrooms + a clove of garlic + 125 g smoked bacon + olive oil for frying +2 theaspoons Italian spices + 1 tablespoon flour + 4 egg’s + 75g grated parmesan cheese + 250 ml cream.
1 Preheat the oven to 180°C. 2 Cut the mushrooms into thin slices. Peel and cut the garlic finely. 3 Heat a pan and fry the diced bacon crispy in about 5 minutes. 4 Add a drizzle of olive oil, mushrooms, garlic, and Italian spices to the pan whit bacon and bake in about 6 minets. Season with a little freshly ground pepper. 5  Mix in a bowl the Flour, eggs, Parmesan cheese and the cream together. Mix the fried mushrooms by the mixture. 6 Grease a baking dish with olive oil. Pour into the baking dish. Slide the baking dish into the oven and bake the clafoutis in about 20 minutes.

Dessert

Strawberry cottage cheese + raspberries + edible decoration.

Put the cottage cheese in a bowl. Decorate this with the raspberries.


Chocolate Peanut Butter Mug Cake


Everybody love’s food that is tasteful. Bud if the food is tasteful and fast to prepare, we love it even more. The new food trend, a real cake in a cup... cup cake???

I've learned that we get more energy from food that we love than food that we don't love.
So that's a good excuse to eat a cupcake every now and then.
